Somewhere around the third course it occurs to me that nothing on this table has been arbitrary. Angle is market-led creative cooking finished with unusual assurance: clean lines, sauces with something to say, seasoning measured to the gram. Jordi Cruz's kitchen keeps the noise out; the creativity serves what the market sent, and the pacing matches the food's composure. Then the bill arrives, and it is a considerable number, yet I cannot resent it, because I can taste where the money went. That is the only honest test at this level. I book it a few times a year, always as an occasion, never on a whim, and the arithmetic has yet to fail me. For modern Catalan cooking run properly, consider this the benchmark.

'Wasn't this supposed to come with the wine?' I asked, gently. No excuses came back, just a fix: the dish remade, returned at the right moment, a fresh glass poured beside it. A kitchen shows its class in recovery, and this one has plenty. The cooking itself is market-led and quietly exact, sauces with depth under them, nothing arbitrary anywhere. Allora, they will see me again soon, and often.
One sauce, spooned over the first plate, told me the evening was in safe hands. Barely ten minutes had passed since the door: coats taken, table ready, the kitchen already declaring itself. Market-driven cooking finished with real precision, clean lines, seasoning exact almost to the gram. Nothing felt arbitrary all night. Assured work, and I mean that plainly.
Quibble first: on my second visit the pacing of the early courses dragged where before it had glided. Everything else had sharpened. This is one of the Eixample's surest-footed creative kitchens, market-led plates finished like technical drawings, sauces that carry depth without shouting, nothing arbitrary anywhere. Returning proved the discipline structural rather than luck on a good night; visit three is already pencilled in.
