Our take

Heat was still coming off the pavements when we set out across the Raval, the kind of evening that makes you doubt every plan, and I half expected to want nothing but something cold and a seat. The walk primes you wrong, that is the thing: these streets promise either tourist fodder or fashion, and Arraval is neither. It is a bistró doing the unglamorous work well. Salt judged right, nothing rushed from the pan, produce respected instead of decorated, plates that taste of what they are. My expectations climbed with every course and the kitchen stayed ahead of them, which is not a race many kitchens win. The price sits honestly for the neighbourhood. Mind that they close Sunday and Monday. We walked home slower than we came, already arguing about what to order next time.

Order this: Ask for whichever main came off the market that morning; the technique speaks clearest there.

Glossy, properly reduced, coating the spoon as a sauce should: not the standard one meets at this price in the Raval. Beside us, a couple disagreed about nothing all evening except whether to return weekly or fortnightly. I admire the devotion without sharing it; once a year satisfies my curiosity. But the fundamentals here receive a gravity the casual room conceals, and that deserves to be said plainly.

Velvet is the wrong word for a sauce, but this one came near: reduced patiently until it clung to the spoon and stayed. Around the small room sat faces the staff clearly knew, orders placed in shorthand, the way it goes when both sides trust the repertoire. Amid the Raval's racket, a bistró cooking with care and directness at prices that respect you. My gaps between visits never stretch far; among the recognised is a fine place to sit.

One sauce told me plenty: properly reduced, seasoned by somebody paying attention, on my table within ten minutes of sitting down. The whole arrival ran that smoothly, unshowy competence from the door onwards. I understand why this Raval bistró has devoted regulars; the technique is real and the value sits where it should. For me, though, correct never quite became compelling. I'll come annually, admiring, not longing.
