It is closed on Mondays and Tuesdays, which is my complaint, because those are just the evenings I find myself wanting a meal like this. Step outside afterwards and the Eixample is doing its usual brisk business, taxis and late offices, people crossing with somewhere to be, and the contrast flatters the restaurant: everything inside moves at its own considered tempo, as the name promises. The cooking is built around clear ideas, textures layered to make a point rather than a show, and finished with visible care. Personal cooking that avoids self-indulgence is a harder balance than it looks, and this kitchen keeps it. The progression is coherent, the bold flourishes earned. An unhurried evening here has become a fixture in my calendar, three or four times a year; the format asks for that time, and deserves it.
Order this: Go the whole tasting route; the chef's signature reads clearest across it.

At lunch the room sits in pale daylight and the cooking reads clean and unhurried; by dinner the same space turns inward and every plate feels weightier, more deliberate. I prefer the daylight. The layered textures and careful seasoning are easier to follow when you're not three glasses deep into an evening. Either way the standard doesn't slip. Midday is when I'll be back.
Very nearly I took the shorter menu, out of prudence; fortunately prudence lost. The longer sequence let the technique declare itself course by course: sauces reduced to the correct tension, textures layered with purpose, temperatures held where flavour actually lives. Nothing is done for effect; every gesture argues a point. Craft of this order deserves an unhurried evening, and I have already pencilled in the next.
My second dinner here settled the question the first had left open: was the assurance a fluke? Frankly, no. Torn between two dishes I wanted equally, I let the waiter break the tie, and his choice arrived so precisely considered, seasoning and texture in quiet agreement, that I stopped second-guessing the house. The name promises a certain tempo and the kitchen keeps to it. Rather a rare thing, consistency of that calibre, and I mean to test it again before the year is out.
