Our take

Composed is the word for the room: a handful of elements, each earning its place, nothing there for effect. One service moment stays with me. Midway through the tasting menu, a cook came out, finished a course at the table, offered one plain sentence about where the produce came from, and withdrew. No script, no flourish; it simply mattered to him. That is the house style. Aürt runs a creative Mediterranean line in which the ingredient leads and technique serves; textures handled gently, seasoning judged with a light hand, restraint reading as maturity rather than timidity. Now and then a course could push harder, and I would not object if it did. But exactness of this order is rare, and candour rarer. I make a point of returning through the year, whenever I want a kitchen that trusts its produce more than its tricks.

Order this: Take the tasting menu whole; the produce-led cooking shows best across its full arc.

The cook who met us at the door doubled as our first waiter, and those opening ten minutes set the tone: unhurried, no theatre, produce named before technique. In Poblenou they work a creative Mediterranean line where the ingredient leads and everything else serves it. Few elements per plate, each with a job to do. Some call that understated; I call it mature, and I find myself back every few months to check my bearings against it.

"Don't touch the stemware, that's the good stuff," a dad whispered to his kid two tables over, and I get it: the glasses here are so fine you handle them like evidence. The plates match the glassware, three or four elements each, produce leading, everything else in service. A couple of courses played it safer than I'd have liked. Still, restraint this confident is its own kind of flavor. Quarterly works for me.
