Don't come looking for lunch; the doors open at six in the evening and the place makes little sense in daylight anyway. Salvatge means wild, and the list honours the translation, tilted toward the untamed end of natural wine and run by people who clearly drink their own stock. Gràcia keeps addresses like this for itself, short on square metres and long on conviction, made for the hours after dinner when a glass is the destination rather than the warm-up. Not everything worked for me; a couple of pours fought back, which is the wager with bottles this feral, and you should arrive knowing it. A yearly habit for me, always after dark and always curious. Put yourself in their hands, skip anything safe, and give the strangest thing they suggest a fair hearing.

Barely a room at all, more a corridor with shelves, every centimetre claimed by the neighbourhood. The crowd is half the furniture: locals at ease, on first-name terms with whoever is pouring. The bottles run wild and want a game drinker; not every glass persuaded me. Still, I admire a bar this certain of its own taste. On the rare evening the mood strikes, no other company will do.
Nine in the evening is when this sliver of Gràcia makes sense; at lunch the wildness feels almost shy. Salvatge means wild and the bottles keep the promise, natural and untamed, poured by someone who clearly drinks what they sell. Not every glass convinced me, in truth. But come after dark, come curious, and the strange ones repay you. A place for the game drinker, once in a while.
