Our take

Dani Lechuga's little meat bar has always known exactly what it is, and I respect that. Bardeni is a counter and a few tables near the Sagrada Família, and what comes out of it is beef treated with real seriousness — properly aged, properly rested, bought by someone who plainly knows a good animal. The steak tartare is the thing everyone talks about, and for once the talk is earned; the burger shames most of the city's. It isn't cheap for what is, at heart, a bar, and that's where the seven of us part ways — some would go monthly, a couple reckon it a once-in-a-while treat. The room is plain, the welcome warm, the cooking honest and unfussy. Good meat, done right, without a scrap of ceremony. I'd be back within the month.

Halfway through the steak tartare I stopped talking, which for me is rare. Dani Lechuga buys beef like a man who has met the animal, ages it with patience, rests it as it should be rested, and serves it at a counter near the Sagrada Família without any pomp at all. Some call this a useful little meat bar. I could eat here weekly, allora, and some months I nearly do.

The room is barely a room: a counter, a scatter of tables, meat aging in view. Within ten minutes of sitting down near the Sagrada Família I'd been steered toward the steak tartare, hands down the best I've had in this city, and a burger that embarrasses most of its rivals. Some people call the place modest. I'd happily make it a weekly habit, and some weeks I do.

Winter is when I stop pretending I can do this at home. My kitchen manages a decent steak; it cannot manage beef matured with this patience, rested to the minute, or a tartare seasoned by hands that have made it a thousand times. From a stool at Dani Lechuga's counter you watch the timing and the temperatures being judged, and you understand the gap. Near the Sagrada Família, and worth a monthly visit on its own terms.

Outside it's tour groups drifting toward the Sagrada Família; at the counter it's pure neighbourhood. Regulars on first-name terms, a cook off shift, one couple sharing a tartare with the concentration of people who have ordered it many times before. Everyone is here for Dani Lechuga's beef and nothing else. The tartare earns every bit of its talk, the burger embarrasses half the city, and the meat has clearly been bought by someone who understands the animal. Most months I join the crowd.

'Order the tartare,' a man instructed his companion at the next stool, 'and argue with me afterwards.' Sound counsel. Dani Lechuga buys beef the way one should, ages it with rigour, rests it with patience, and the cuisson is judged rather than guessed. My reservation is scope: talent of this order confined to meat alone leaves one wanting the rest of the repertoire. Even so, I return each season and leave contented.

My stool was not designed for lingering, and coats end up folded on laps. That said, the counter earns the discomfort: you watch Dani Lechuga's team age, rest and cut beef with the patience of people who bought the whole animal on purpose. The tartare merits its word of mouth, which I concede reluctantly, since the word of mouth runs a touch feverish for me. Every few months, and gladly.
