Our take
Let me lodge a minor complaint first: arrive late and the chatter stacks up against the bottles until you lean in to hear your own table. It is the sound of a room enjoying itself, but it is still a sound. Go earlier and the place shows its better register, a low hum of regulars, a counter getting on with its work, shelves carrying honest dust. Tucked inside a hotel, it behaves like the opposite of one: there is no scene to join and no one selling you one. The vermut is properly made, the small plates arrive without ceremony, and there is marginally more care here than the format demands. It rewards low expectations and then edges past them. Not a destination, and not trying to be one; once a year, when the polished places have worn me out, this is precisely the antidote.
Order this: A vermut and whichever conserva the counter is proudest of that day.

The panel — every critic who went
Unanimous — all agreeA little dish of something briny showed up next to my vermut before I'd asked for anything, and when I looked over, the guy behind the bar just shrugged like it was obvious. That shrug is the whole philosophy. Marginally more attention than the format demands, zero ceremony, no one angling for your camera roll. Plates come out whenever they're ready. An annual stop suits me, and I'll take the shrug every time.
'They still haven't asked for the table back,' my friend said, well into the afternoon. That is what the neighbourhood knows and visitors don't: this bodega lets you sit. The vermut is the real thing, the small plates come when they come, and there is a shade more care in the cooking than a place like this owes anybody. One slow afternoon a year here puts me right.
Out on the pavement you would pass without a glance, which suits the place. Inside, the noise is the right kind: conversation and cutlery, glasses of vermut set down without ceremony (no music straining to make a point). Nobody wants your photograph. The room offers modestly more than the format requires, and I mean the attention, not the décor. Hardly an event; on the right evening, the hum alone is worth the chair.
