Full disclosure: I spent a whole minute just turning my wine glass by the stem, watching candlelight move through the bowl, because every object on a Caelis table earns that kind of attention — the heft of the silverware, the linen, the spacing between you and your neighbor. Romain Fornell runs the kitchen at the Hotel Ohla, cooking French-schooled food on Mediterranean product, serious without a hint of stiffness. The staff read our mood almost instantly: we came to play, so they played along, and nobody steered us toward the check. Expensive? Very, and fair, because you're buying an evening rather than a dinner. Save it for actual news, the kind where you'll want to remember the room. I manage a couple visits a year, never without a reason, and the reason has yet to feel thin.
Order this: Go all in on the full tasting and let the sommelier steer.

Late on a weekday evening, the smart end of Via Laietana gone quiet, and nobody in this room is hurrying anyone. French technique over Mediterranean produce, executed with a straight face that never turns cold. Its one weakness is the address itself: you must want this much polish of an evening, and not every appetite does. Mine did, and does, more often than I'd admit at parties.
My confession: I walked in rehearsing my scepticism. Grand rooms on Via Laietana tend to come with grand airs, and I arrived braced for both. What I got instead was French discipline over Mediterranean produce, staff who watch a table without hovering over it, and warmth where I had expected starch. I settled the bill without a wince, which from me is high praise, and was out the door already weighing which family occasion earns the return.
Booking a fortnight ahead felt excessive, until the room filled and explained itself: a table of Parisians comparing notes, a couple marking an anniversary, a lone diner eating better than any of us. This is a crowd that came to eat, not to be seen, and the kitchen repays them. French technique over Mediterranean produce, with service that reads the table without hovering. I was neither rushed nor flattered. I left already thinking about the next visit.
