Our take

Outside, Sant Gervasi keeps its composed quiet, which makes the low roar you walk into at Coure a small pleasure. The noise is the good sort, conversation rolling over the sounds of a kitchen doing things properly, and by the second seating it swells until the room feels like one long table. Nobody is performing. Sauces are reduced to where they should be, proteins cooked to the right point and then left alone, seasoning laid down with confidence rather than caution. This is a chef's restaurant in the plain sense of the phrase, substance ahead of styling, a reputation built slowly and still defended plate by plate. Every few months I take a corner table, let the din close over me, and remember why the city's classics became classics.

The room is low-lit and grown-up, which tells you a lot about this pocket of Sant Gervasi: people around here eat well without needing to post about it. Coure fits right in, a chef's kitchen doing creative market cooking with the sauce work of somewhere far fussier. I make the trip uptown every season or so, and it always feels worth leaving my own zip code for.

'Worth getting soaked for,' said the man shaking out his umbrella at the next table, and he was not wrong. Outside, a downpour had emptied the pavements of Sant Gervasi; inside, Coure worked as though weather were someone else's problem. A sauce reduced with patience, fish taken to the correct point, styling kept subordinate to substance. One dines here as one hopes to everywhere, and I manage it several times a year.
