Our take

Drizzle had emptied the Poble-sec pavements, and the first thing I clocked inside Denassus was the stemware: fine-lipped, spotless, the sort a bar only invests in when it takes its vi seriously. Everything else follows from that detail. The natural end of the cellar runs deep, the pours arrive with a line of story if you want one and silence if you prefer, and the tables sit far enough apart to let a glass breathe in peace. I asked what was singing that week and left with two new producers noted in my phone. Tuesdays they rest, worth knowing before you set out, because setting out is required; this is not a bar you stumble past. Monthly for me, weather regardless, and honestly the glasses alone would carry the argument.

Three glasses in on a weekday afternoon, and my calendar simply gave up on me. Daytime is when this Sants wine bar shines: sun on the tables, the pourer with time to walk you through the funkier end of the list. Dinner gets busier and, some say, patchier. I've heard the grumbles and I don't care. This is a room run by somebody with a good palate and better instincts, and I show up monthly like it's a standing appointment.

The street gives nothing away, an ordinary stretch of Sants well off the tourist current, and that anonymity is part of the charm. Inside, wine is handled with visible affection: bottles opened at the right moment, glasses suited to the pour, a list generous at its natural end and plainly assembled by someone who tastes with care. Not every bottle persuaded me; the wilder ones ask a little forgiveness. The care never wavers, though, and it keeps drawing me back.
