Our take

Condensation on the first glass, and the street's chill still on my hands. The walk over had built Doga up in my head; a friend had spoken of it the way you speak of a secret, so I arrived expecting a small revolution. What I found was gentler. A short, personal list, natural-leaning, poured by people with obvious affection for their growers. Bottles here get proper care, the counter invites conversation, and the slow drinker does well here while the hurried one leaves puzzled. My own evening faded sooner than I wanted, a good tast that never became a great one. Once a year feels honest to me. Come unhurried, ask what has just been opened, and let whoever is pouring set the pace.

Order this: The natural white they are proudest of that week, taken slowly at the counter.

Hardly larger than a decent cellar, this room, and the list matches it: short, chosen rather than accumulated. Suggestions arrive like confidences, each bottle introduced with its maker's name and a reason for being there. I admired the method more than I loved the wines, which stopped just short of persuading me. Well-kept bottles, though, and advice offered in good faith. Annually, when patience and thirst align.

Twelve months passed between my first visit and my second, and Doga had barely moved, which I mean two ways. The list remains personal rather than encyclopaedic, every suggestion landing like a tip from a friend who knows the makers. But the spark I hoped would grow hadn't, quite. Bottles well kept, intent sincere, my enthusiasm polite. A yearly call seems the fair rhythm, made when there is time for slow counter conversation and no hurry at all.
