Late on a wet January afternoon, with the Raval half-empty, is exactly when this kitchen makes most sense. It treats old Catalan cookery as a subject to study rather than a postcard, reviving techniques and pairings most rooms have forgotten, and in cold weather that scholarship turns comforting.
