Our take

Half past midnight is when we finally spilled back onto the street, which is wild, because I'd walked up to Sant Gervasi budgeting a polite ninety minutes. The walk primes you for calm: quiet blocks, apartment lobbies, zero scene. Then Oriol Ivern's little dining room, where the flex is restraint. One idea per plate, carried all the way through. Seasoning goes right to the line and stops there. Temperatures get treated like they matter, because they do, and the meal's rhythm never lost me once across the whole menu. Nothing here is chasing virality; it's craft repeated until it reads as effortless, and the check lands gentler than cooking this good has any right to allow. I'm already a little protective of the place. Every couple months, same corner table if I can swing it, leaving later than planned.

Order this: Take the whole menu and give it the evening; the pacing earns it.

Small room, short menu, and not an ounce of decoration doing the work the cooking should. Up close the technique is quietly formidable: acidity read correctly, plates landing at temperature, each dish built on one idea and seasoned to its edge and no further. Sant Gervasi keeps it tucked away, and no one seems in a hurry to correct that. Four visits a year feels about right, purely to be reminded what unshowy competence looks like.

Rain on the pavement, the first cold snap of the autumn, and a plate built on a single clear idea arrives at exactly the right temperature. That, in miniature, is the house. Small dining room up in Sant Gervasi, acidity read against fat with an engineer's patience, seasoning taken to the edge and held there. Restraint rehearsed until it looks effortless. On a wet evening it comes close to ideal, and I try never to let a winter pass without it.

So small is the room that claiming a corner of it is my one quarrel with the establishment. On the plate, restraint: each dish built around a single idea, one fine product read correctly, seasoned to the very edge and never beyond. Acidity and fat are weighed with a technician's calm; everything lands at its proper temperature; the pacing never falters. No creativitis here, merely competence rehearsed until it looks effortless. Each quarter I go back, and each quarter it holds.
