Our take

My one grumble came early: we stood at the door slightly too long while the front of house finished a handover, nobody quite claiming us. It was the only loose stitch of the evening. Once seated, the first ten minutes told me most of what I needed: bread at the right temperature, butter no afterthought, an opening plate finished with the kind of pastry-room precision that betrays a house built on training. Coming from that world myself, I notice the finishing first, and here it never wavers. The cooking is creative without straining for it, classically anchored, reliably well seasoned; the odd course plays it safe, though the craft never lapses. A table built for occasions, and mine seem to come round every few months.

It was the young sommelier who set the tone, matching glasses to each course with the same discipline the kitchen brings to its finishing. Nothing was poured for show; every bottle argued its case softly and carried it. You sense a house built on training, where each step exists for a reason, and the wine service has absorbed that rigour whole. I was planning my next visit before the coffee arrived.

A dessert built with draughtsman's patience arrived just as the room reached its lunchtime hum, and the contrast was instructive. Hofmann's dining room keeps to a civilised murmur; you can hear your companion, and the kitchen's discipline seems to hold the volume in check as well. Pastry rigour sits under everything, each element on the plate earning its keep. I'd give it a few months, then book again.

Booking lunch rather than dinner turned out to be the wiser move. Daylight suits cooking this disciplined; you see the pastry-school finishing for what it is, every element placed for a reason, the creative Mediterranean line reading clean rather than showy. Dinner brings extra polish and a stiffer mood, and I missed the ease. The rigour of a house built on training runs through everything. Now and then I make the trip uphill, and lunch is when I go.
