Halfway through the counter seating, someone refills my glass before I've noticed it's low, and that's Koy Shunka in one gesture. The drinks get the same treatment as the fish, poured at the right temperature with nobody narrating at you. I asked for guidance once and got a pour that made the next three courses make more sense; after that I just nodded. Watching the cook at the counter, I forgot I was two streets from the worst of the Gòtic's souvenir shops. Koy Shunka's trick is the contrast: outside, tour groups and postcard racks; inside, Japanese knife work meeting Mediterranean seafood with total seriousness. Take a counter seat if one comes free; from there, all that discipline looks strangely soothing. I return each season and it steadies me every time.
Behind the counter, the cook in front of me barely said a word all evening, and the room was better for it. You listen instead: knife on board, the Gòtic seeping faintly through the door, a dozen diners going still at the same moment.
