A cook looked up from the pass and nodded hello before anyone had taken my coat, and the first ten minutes kept that tone: watchful, and completely without theater. MAE sits at the top of Sant Gervasi's price range and knows the burden of proof that carries, so the early moves are all reassurance — a seat without fuss and a glass in hand fast, the menu explained in two sentences rather than a sermon. Then the cooking starts making the argument. Plates hold two or three ideas, each one finished; the Mediterranean-and-Costa-Rican angle reads as a point of view, not a slogan. Seasoning is dialed in tight. I save it for occasions, a couple of visits a year, and I'd arrive early on purpose just for the pleasure of that soft landing.

Uptown gets underestimated. Walk out of MAE and it's all sleepy streets and tended balconies, no one selling you bohemia, while inside the plates are braver than half of what the old town serves. Each dish trusts two or three elements and leaves them alone. The calm outside seems to settle the kitchen, and I climb back up more often than I'd planned.
Up in Sant Gervasi the room does something clever: it recedes. Second visit in, I noticed how little of the decor I remembered and how much of the food I did, which is the right ratio. The cooking has grown surer since my first meal, confident enough to rest a dish on two or three chosen elements and then leave the plate alone. Wiser heads treat it as a place for occasions. I keep inventing occasions (about one a month, if I am truthful).
Nearly midnight when we finally stepped out, and my sister, who rolls her eyes at fancy cooking, had gone quiet in the good way. She is exactly who I'd bring to MAE: the sceptic. The plates hold just a few things, each one pulling its weight, nothing on show for its own sake. Creative food that respects your appetite as much as your attention. Halfway home she admitted she'd loved it.
