Our take

Somebody two tables over was telling her friend that this was where she brought people she actually liked, and by dessert I understood her completely. Olivos is who-you-bring cooking: the father who distrusts novelty, the friend who reads wine lists for pleasure, both go home happy. In its pocket of Sants, the kitchen starts from whatever the market offered that morning, treating old dishes with affection and a steady nerve, and the cellar is assembled by somebody who plainly loves drinking as much as selling. Nothing hurried, nothing loud; note they close on Mondays, so plan the week accordingly. I bring a different guest each visit and watch the room win them over by the second course, which has become my favourite part of the ritual. A long lunch here every season, and the world stays in order.

This is where the neighbours actually eat, and the room proves it: Sants voices, long tables, nobody photographing their dinner. The cooking starts from the produce and stays inventive without turning restless, classics updated with judgement rather than gimmickry. Wine is taken as seriously as the market basket, which settles it for me. I'd happily cross the city for a table, and every few months I do.

I'll confess I arrived in a foul mood, ready to find fault. The welcome at the door didn't gush: a good table offered, a bottle suggested with easy knowledge, and my mood had surrendered before the first course was gone. Market cooking with its feet planted, produce leading, the classics treated with respect and a little nerve. Sants keeps some real cooks. This place has a few of them.

Ordered cautiously, which proved the only mistake of the afternoon. One plate, built around whatever looked best at the stalls that morning, has been loitering in my memory ever since; frankly, a dish that follows you home is worth more than most of what passes for ambition in this town. The room takes wine as seriously as produce, which is rarer than either. Sants-Montjuïc is a trek for some people. I have already been back once, and I do not do that lightly.
