Halfway through the tasting menu, a sauce stopped me: deep, patiently built, the kind of foundation most modern kitchens have traded away for foam and gesture. That, for me, is the signature at Quirat, not a single dish but the discipline underneath every one of them. Up on Montjuïc, this modern Catalan kitchen cooks with genuine technical command — seasoning judged to the gram, cuisson faultless, each plate organised around an idea rather than an effect. It carries the polish of a serious hotel kitchen while escaping the anonymity that so often comes with the setting. The creativity is measured; the produce leads, and the technique tightens quietly around it. Restraint of this order takes nerve, and it is among the rarest things on any menu in this city. I book a considered evening here a few times each year, and it has yet to disappoint me.

Not proud of this, but I spent half my dinner at Quirat listening in on the table beside ours, two people breaking down each course like a film they'd both loved. Honestly, fair. This is precise modern Catalan cooking up on Montjuïc, flavors with real depth, every element earning its seat on the plate. It costs serious money and, rarer still, you can tell exactly where it went. Every three months or so I cave, and it pays off every time.

Went back a second time mostly to check the first wasn't a fluke. It wasn't. When the bill came I paid without the wince this level of cooking usually extracts, because the money had all gone on the plate: sauces with real depth, seasoning judged like they mean it. Walking down from Montjuïc I was already planning the third visit. Clever food, yes, but clever in the service of eating.

From my seat at the pass I watched a sauce being finished with the patience of a man in no hurry to impress anyone. That told me plenty. This is modern Catalan cooking built on ideas, not effects: seasoning judged to the gram, depth where lesser kitchens settle for shine. Up on Montjuïc it feels almost private. Real money, yes, and worth it a few times a year, when I want craft at close range.
