Eight seats along, a stranger was being talked out of his own order, gently, and I understood the house rules at once. The wise decision at Sato i Tanaka is to stop deciding. The counter follows whatever came in freshest that morning, so the menu is less a document than a weather report, and the people behind it will read you far better than you'll read the list. The room, in the Dreta de l'Eixample, is small enough that nothing hides: no wasted motion, no noise in the technique, Japanese cooking of a precision that never tips into fuss. Each visit comes out slightly different because the market writes the script, which keeps me curious. No theatre, no grand production, just quiet accuracy at close range. My next booking tends to sort itself out before the tea arrives.

We had booked weeks ahead, and the size of the room explains it: not many seats, none of them wasted. The moment that stayed with me was small. My chopsticks hovered over something I couldn't name; the waiter appeared, named it, and withdrew before the exchange could turn into a lecture. That is the house in miniature, exact without fuss. Nothing wasted in the cooking either, and nothing on the bill felt like decoration.

My guest raised an eyebrow across the counter, and I saw she had caught it too: one course had gone out a shade warmer than it should. Before a word was said, the piece was withdrawn and remade, without apology or announcement, simply corrected. That reflex says more about a kitchen than any triumph. Knife work exact, seasoning restrained, rice handled with respect. A house that watches itself so closely will see me again before long.
