Blunt truth: tasting menus in this city are mostly a tax on optimism, and this one isn't. Slow & Low uses low temperatures and long cooking as tools, not party tricks — proteins handled patiently and precisely, smoke and ferment showing up for flavor rather than spectacle. You can taste a cook who knows why a technique exists, not just that it photographs well. The menu travels across influences, and occasionally a dish reaches harder than it should, but the intent stays honest. Now, the bill: it's a creative tasting format, so no, it isn't cheap. What surprised me was how little of it felt like padding. Every course reads like it cost something to make, which is rarer than it sounds. I walked out feeling squared with the check, and I'd sign up again in a few months without a second thought.

A dining room in Sant Antoni with a clear point of view, calm where others fidget. When my main course arrived, the young man serving us paused, let the smoke settle, and only then described the long, low cooking behind it: no showmanship, simply information offered at its proper moment. Proteins handled with genuine care, ferment brought in for flavour, not effect. I shall be back before the season turns.

Sant Antoni was still packing up its market stalls when I arrived, and the hush inside felt earned against the street. Within minutes of sitting down, the intent was plain: low temperature and long cooking used as tools, not tricks. Proteins handled with obvious skill, smoke and ferment brought in for flavour rather than spectacle. A kitchen with a point of view, and the restraint to state it softly. Each return is partly to see whether it holds. It always has.

This is exact, patient cooking disguised as a casual night out. Look around the Sant Antoni room and the tables tell you plenty: off-duty cooks, couples settling in for the long route through the menu. Low temperatures and long hours are used as tools rather than tricks, smoke and ferment there to feed flavour, never spectacle. A definite sensibility runs through the plates. I'd happily return before the menu changes.
