Drizzle had chased the whole street indoors, and the bar stood three deep before I had folded my umbrella. Timing is the entire game at this old Basque address. The cold spread waits patiently along the counter, but the hot pintxos come out of the kitchen in waves, and you either learn the rhythm or watch the veterans intercept everything worth having. Settle in, hold your ground, and let their schedule become yours; a cold txakoli makes the waiting perfectly agreeable. Is any single mouthful worth a taxi across town? Not really. The pleasure is cumulative rather than acute: an hour of small good things in a room that was doing all this long before anyone thought to photograph it. An annual outing suits me, enough to enjoy the tradition without letting the elbowing lose its charm.
