Up in Sarrià the street still behaves like a village, and Tram-Tram belongs to it: a genteel room where the loudest sound all evening was a cork leaving a bottle. I mean that as praise. The hush lets you hear the cooking, Catalan classics treated as a living foundation, modern touches applied with restraint and always in service of the roots. My mother would have recognised half of what I ate and been curious about the rest; that is the balance I want. Cooking points honest, seasoning measured, the calm of a kitchen that has had time to settle. Trends pass this place by, and everything is better for it. I could eat here every month without it ever going stale, and in a city this loud, an evening this unhurried deserves guarding.
Order this: A Catalan classic in the house's creative reading; that dialogue is the point.

Restraint is a harder trick than invention, and this kitchen has mastered the harder one. Up close, the creative flourishes reveal themselves as function, not decoration: a texture adjusted here, a temperature judged there, the Catalan base always audible underneath. Nothing shouts. In genteel Sarrià that could pass for timidity; watch the plates closely and it comes across as control. A monthly table here would suit me nicely.
Lunch is the secret in Sarrià, and the bill proves it: at midday the same Catalan cooking that turns stately at dinner arrives relaxed and remarkably kind on the pocket. Most people file this under special occasions. Not me. A kitchen that treats the classics as something alive, adding its modern touches with restraint, earns a weekly chair at my table of habits. Book a window seat and take the long way through the menu.
Dinner runs a shade too genteel for me, the room so unhurried it can tip into hush, and I know some find the whole thing dated. Come at lunch and I'll defend Tram-Tram against the lot of them. Daylight suits Sarrià and it suits this kitchen, Catalan classics used as a foundation to build on, modern touches restrained and purposeful. If it stood on my street I'd be at that table weekly, arguing the case with anyone who shrugs.
