Same. The Catalan cooking is rooted in the market and built the slow way, sauces with real patience in them, a sommelier you could listen to all night. It's expensive, it's formal, and it never tries to surprise you, which turns out to be the charm. I keep it for nights that need ceremony, and there are more of those than I'd admit.

One small complaint: the first ten minutes feels like calling on a strict great-aunt, all starched linen and hushed choreography, and I invariably feel underdressed for it. Then the service settles around you and the logic of an old house takes over. Sauces built the long way, market produce handled with sober technique, Catalan cooking as the grandees of Sarrià have always expected it. By the first course the formality reads as care. I go back through the year, and I have started dressing properly.
A sauce did it: spooned at the table with a ceremony you rarely see now, tasting of days of reduction, not minutes. That is the star product, not any single dish but the sauce work itself, built the slow way from a market the kitchen plainly trusts. Sarrià's old guard has eaten Catalan cooking off these starched cloths for generations, and on this evidence they have been right all along. I shall be back within the quarter.
Go at lunch. Dinner is handsome, but midday is when old Sarrià arrives and the dining room finds its true rhythm, starched cloth and all. The Catalan cooking works from the market up, the sauces are built the long way, and the technique is sober enough to trust with anything. Generations have eaten here without flinching at the formality (or the cost), and by daylight you understand why.
