Our take

If someone asks me where in Barcelona a vegetable is treated with the seriousness we usually save for meat and fish, I send them here, no hesitation. Xavier Pellicer built his name on produce — the market first, the menu after — and it shows in every plate: vegetables coaxed to the centre of the table and made to taste of far more than themselves. This is refined, quietly technical cooking that never once forgets where it came from. It's a special-occasion table — the kind of bill and the kind of meal you plan for — so once a year, done properly, is the honest verdict. My one quibble is the cellar, which doesn't always rise to the food; but the produce, the room and the looking-after are about as good as vegetables get in this city.

My only grumble is the hush: the dining room takes its produce so seriously that conversation drops to a murmur, and I sometimes missed a bit of clatter. The carrot has earned the reverence, though. Nowhere in the city gives vegetables this level of technical attention, the market chosen first and the menu written after, each thing coaxed into tasting bigger than it has any right to. Serene, exact, faintly solemn. Once a year does it, and I leave resolved to cook greens better.

Nobody in this city takes a vegetable as seriously. Mid-meal, the waiter set down a plate, explained its provenance in one sentence, and withdrew; the restraint said everything. The cooking is refined and quietly technical, produce first and menu second, and a carrot here tastes of more than itself. A yearly visit, and each time it resets my idea of what a kitchen garden can do.

Nothing about this stretch of the Eixample suggests you're near the city's most convincing argument for vegetables, which is somehow fitting. The flaw, if we're being strict, is that cooking this restrained can leave a certain kind of appetite politely unsatisfied; carnivores will want more heft than the menu cares to give. It hardly matters. I ration myself to a single visit a year, and each one recalibrates what I think a carrot can do.
