A dark, deep rice from the Ebre delta, cooked with real authority, is reason enough to book, though the room deserves its own mention. It hums rather than roars: conversation stays comfortable, tables sit far enough apart that you needn't share your neighbours' evening, and the service moves at the same volume as the space. Not casual, the prices see to that, but never pompous either, which at this level is rarer than it ought to be. The kitchen draws on the rivers and rice fields of the Ebre with a genuine sense of place, precise and generous at once, and you leave feeling you have eaten somewhere, not merely somewhere expensive. I'd go back every few months, wallet permitting; for an occasion, few rooms at this level do it better. Rather wonderful, actually.

That dining room changes character with the light. At lunch it sits serene, almost hushed, and the cooking of the Ebre delta reads at its clearest: rice with real depth, river and sea handled with authority. At dinner the same plates turn slower, more perfumed, faintly romantic. Go at midday to study the food, at night to fall for it. I manage both, a few times a year.
Yes, it's expensive, and no, I didn't mind. Xerta cooks the Ebre delta like it means it: rice with genuine depth, river produce that tastes of somewhere particular, a sense of place you can drink as well as eat. The bill stings for a moment, then you remember how many rooms at this level give you far less identity for the money. A handful of times a year that identity is exactly what I'm hungry for.
You take the room in slowly, calm, well spaced, good linen, and then a waiter did the thing I still think about: he saw my rice cooling while I talked too long, and without a word replaced it with a hot spoonful from the pan. That gesture is the house entire. Cooking of the Ebre delta, river and rice given real authority, a true sense of place on every plate. Only the price keeps my visits rationed.
